INGREDIENTS
- 1 pound boneless, skinless chicken breasts
- 1 medium red bell pepper, seeded and cored and sliced into rings
- 1 medium red onion, sliced into 1⁄4 inch rounds
- 1 medium zucchini, sliced into 1⁄4 inch rounds
- 1⁄4 pound mushrooms, sliced
- 1 bottle La Lechonera Natural Mojo Criollo
- Fresh pizza dough for one 12 inch pizza
- Olive oil
- Salt and pepper
- 8 ounces pizza blend shredded cheese
INSTRUCTIONS
- About one hour before grilling pizza, place chicken breasts in a zip
top bag and pour the La Lechonera Mojo sauce into the bag to cover
the chicken well. Close bag securely and place on a plate in the
refrigerator until ready to grill.
- Place all your veggies (except mushrooms) in another zip top bag and
pour about 1 cup of La Lechonera Mojo sauce in the bag and after
closing the bag, shake it around to cover all the veggies. Place the bag
on another plate and refrigerate until ready to grill.
- Roll or pat your pizza dough onto a pizza peel (or on a rimless baking
sheet) that is lightly dusted with cornmeal into a 12-inch round.
- Heat your grill to about 450 degrees. When grill is ready, drain your
chicken and discard the marinade. Grill your chicken to an internal
temperature of 165 degrees. Remove to a plate to rest.
- While grilling your chicken, place a grill basket on your grill to heat up
and drain your veggies and discard the marinade. Place the veggies
in the grill basket and cook thoroughly, getting some grill marks and
char. When veggies are done, remove to a platter while the chicken
finished cooking.
- When chicken and veggies are done and resting, oil the grill grates
well and slide the pizza dough directly onto the grill grates. It only
takes a couple of minutes each side for the dough to cook! Watch
carefully!
- Remove carefully to a clean baking sheet or pizza stone. Drizzle olive
oil on top of finished crust. Sprinkle a small amount of cheese over
the top of the crust.
- Slice the chicken thin and arrange on top of the crust and arrange the
veggies as well. Season with salt and pepper to taste. Sprinkle the rest
of the cheese on top and place under the broiler for about 4 minutes
or until cheese is melted and bubbly.
